Jerkin’ Pasta

I know it’s been a while, but I have been rather busy. Icons Boutique is moving in full throttle. I am moving this week so I have been packing. I started to teach art classes on my “spare time”, and I am trying to keep up with my social events.  So it’s been a while that I have cooked because I literally have no time. However, some time ago I did make this fabulous dish and it was super delicious.

Let’s start. Now this is a spicy dish.

Here are the ingredients you will need;

  • Organic wheat pasta
  • Smart balance light butter
  • 1/2 cup white onion
  • 1 tbsp jerk seasoning
  • 1/4 cup of cherry tomatoes
  • 1 cup of spinach
  • 1/2 cup of shrimp (I like to use jumbo shrimp)

1. Start by boiling your pasta. While your pasta boils, you can work on the mixture. IMG_41992. Take some of the light butter and let it heat up in a pan. Now don’t use too much but it will defeat the purpose of the “lightness”. Add the onion and start to brown.

IMG_4201IMG_42033. Add your jerk seasoning. The one below has a nice kick to it, but you know me, I like fire. Mix into a paste-like consistency.

IMG_42044. Add the cherry tomatoes. Saute it. Then add the spinach. Make sure it is thoroughly mixed.

IMG_4205IMG_4206IMG_42075. Add the shrimp. Again, make sure the flavors are all blended well.

IMG_4208IMG_42096. Lastly, add the pasta. Stir the ingredients. And vuala; there is your fast, easy, spicy dish.
